Parmesan Chicken Fingers


Jack’s Loft’s Chicken Fingers is one of my favorites.  Their honey mustard sauce makes them even yummier and can be eaten with or without rice on the side.  In my version, I added Parmesan cheese to the breading mixture to bring more taste.  Serve it as an appetizer or main dish.

Parmesan Chicken Fingers



Chicken breast fillets, sliced

2 cups flour

2 eggs, beaten

1 cup breadcrumbs

1 cup grated Parmesan cheese

1 tbsp parsley flakes

a dash of salt & pepper


For the Honey Mustard Sauce:

1/4 cup mayonnaise

1 tbsp prepared mustard

1 tbsp honey

1/2 tbsp lemon juice



Prepare breading mixture by combining breadcrumbs, 1 cup flour, parmesan, salt & pepper & parsley flakes.   Dredge the chicken fillets in flour, then eggs, then breading mixture.  Deep fry until golden brown.  Set aside.

For the sauce, whisk together all the ingredients in a small bowl.
