Pork Humba


Adobo has been a staple dish in our household.  My Mom cooks great Adobo whether Chicken or Pork.  But before I get my serving, I usually add sugar to make it a little sweeter.  I like it that way.  Little did I know that there is actually a different dish close to what I was doing with the Adobo.  And it’s called Humba.

Pork Humba



1/2 kg. of pork, adobo cut

3 cloves of garlic crushed

1 cup water

1/3 cup vinegar

1/4 cup soy sauce

1/4 cup brown sugar

1 bay leaf

1/4 tsp pepper

1 tsp cooking oil

salt to taste


2 medium potatoes, peeled and sliced

2 hard boiled eggs, sliced



Combine all ingredients in a pot and bring to a boil.  Lower heat and simmer for about an hour or until pork is tender.  You may add more water & sugar according to your taste.  If you are going to add potatoes,  add it in the pot about halfway of the cooking time.  Add eggs for additional garnish.  Remove bay leaf before serving.
