Baked Macaroni

This is also a classic pasta dish and one of the more complex and time-consuming ones.  It usually takes me about 2hours to finish prepping and cooking.  I normally use Penne for this dish but this recipe can also be used for Lasagna, Baked Spaghetti or Fettuccine.  Any kind of pasta will do, it’s the sauce that makes the difference.  By the way, my version is a Filipino sweet-style sauce.  If you prefer otherwise, go right ahead.

Preheat oven in 350 deg F

 

Ingredients:

Penne or Macaroni pasta

Grated Quickmelt cheese

 

For the Meatsauce:

1/2 kg. ground pork or beef

1 medium pack of Del Monte Spaghetti sauce, sweet-style

1 tbsp butter

1 tbsp oil

3 cloves of garlic & 1 onion, diced into bits

3 pieces of hotdog, sliced into strips

3 strips of bacon, sliced into cubes (optional)

salt, pepper & sugar to taste

parsley flakes

Baked Macaroni

 

For the Bechamel sauce:

3 tbsp butter

2 tbsp flour

2 cups of milk

2 cups of grated Parmesan cheese

a dash of salt, pepper & nutmeg

 

Directions:

Preheat the oven to 350 degrees F.  Cook pasta according to package directions or until al dente, about 8-10 minutes.  Drain and stir in 1 tbsp oil to prevent pasta from drying up and sticking to each other.  Set aside.

Prepare the Meatsauce:

Cook the ground meat in about 2 cups of water until it changes to a light brown color.  Set aside.  In a saucepan, melt butter with some  cooking oil.  Saute garlic and onions.  Add ground meat and stir in Spaghetti sauce.  Add a cup of water.  Simmer for about 3mins in medium heat then season with salt, pepper & sugar according to taste.  Add hotdogs, bacon (optional) and parsley flakes.  Turn off heat then stir in pasta.

Prepare the Bechamel Sauce:

Melt butter in the pan then add flour to make a roux (it looks like a cream colored paste).  Lower the heat and add in milk.  Let it simmer for about 2 minutes then add Parmesan cheese, salt & pepper.  Continue stirring until it slightly thickens.  Add ground nutmeg.

Line a casserole dish with a thin layer of butter.  Pour in pasta just enough to cover the bottom of the dish. Pour about 1 cup of cheese sauce, then sprinkle some grated Quickmelt cheese.  Repeat layer of pasta, cheese sauce and grated cheese until the casserole is almost full.  For the last layer, make sure that the cheese sauce covers the entire dish.  Then generously top with grated cheese.  Bake for about 45mins or until all cheese is melted.  Turn off the oven and let it rest for 10mins before serving.
