Easy Chicken Afritada

Quick and Easy.  Two words describing what Del Monte did with cooking most of our favorite dishes.  This is also the name of their new product which is a range of easy-to-use meal mixes and sauces.  I picked up one in the grocery and thought of trying it out.  And it is indeed quick and easy!

Easy Chicken Afritada

 

Ingredients:

1 pouch Quick n Easy Afritada Sauce

1/2 kg chicken breast fillet, cut into chunks

1 medium potato, diced

1 medium carrot, diced

1/4 cup green peas

2 1/2 cups of water

cooking oil

a dash of salt & pepper

 

Directions:

Fry potatoes in cooking oil for about 3 minutes.  Set aside.  In the same pan, stir fry chicken until light brown.  Add 2 cups of water.  Cover and simmer for 20 minutes or until tender.  Add carrots and cook for another 10 minutes.  Add green peas, potatoes, afritada sauce and 1/2 cup of water.  Stir until sauce is well blended.  Season with salt & pepper according to taste.  Let it simmer for 5 minutes.  Serve while hot.
